He grew up with a single mother, as his dad had left the family when he was 2 years old. His mother worked in a restaurant as a cook and with the money she made, raised Joey and paid for his education.

Chestnut first dove into the world of competitive eating in 2005 while he was a student at San Jose State University. He gave a break-out performance in the deep-fried asparagus eating championship, in which he beat high-ranked eater Rich LeFevre by eating 6.3 pounds of asparagus in just 11.5 minutes. The same year, he qualified for his first Nathan’s Hot Dog Eating Contest and ate 32 hot dogs placing himself at the third position.

On 24^th March 2008, Joey set a new record at The Big Texan Steak Ranch restaurant in Amarillo, Texas by eating a meal of 72-ounce ribeye steak, salad, baked potato, shrimp cocktail, and roll in just 8 minutes 52 seconds. He consumed 185 Catalina croquetas in eight minutes, 28.5 canteen sandwiches in 10 minutes, 43 pepperoni rolls in 10 minutes and 52 4-ounce mutton sliders in 10 minutes. On 4^th July 2016, Chestnut redeemed himself with 70 hot dogs and buns.

Furthermore, on 4^th September 2016, he won his third consecutive title at the United States Chicken Wing Eating Championships in Buffalo, New York by eating 188 wings in 12 minutes. Next year on 4^th July 2017, he defended his title and ate 72 hot dogs and buns. This was his 10^th title and once again set a new Coney Island record.

In 2018, Joey competed in The Amazing Race 30 alongside fellow competitive eater Tim Janus. In addition, Chestnut won his 11^th Nathan’s Hot Dog Eating Contest, eating 74 hotdogs on 4^th July 2018.
